Asparagus Roasted with Garlic


Asparagus Roasted with Garlic

 

This is a very simple and delicious way to serve asparagus.  It takes minutes to prepare and it cooks in about 15 minutes.

Ingredients:

1 bunch of asparagus woody ends removed

2 cloves of garlic, chopped

Olive oil

Salt and pepper

Directions:

Preheat the oven to 375; place the asparagus in an oven safe dish.  Cover the asparagus with the garlic.  Sprinkle some olive oil on top, mix to coat all of the asparagus.  Season the asparagus with salt and pepper.  Cook for about 15 minutes, check often and remove when done to your taste.  I like my asparagus al dente.

    • It is a great veg that a lot of people pass by thinking that they don’t like it because they may have eaten it very overcooked. Cooked properly it is delicious.

  1. In around June we can literally hop in the truck and find them growing along side the road in the ditches. My FIL each year gets a truck load of them. He’s pickled them which are amazing and he puts them on the grill, in a fritatta, all sorts. We simply love them. If you live in an area where it is grown in a farmers field put your goggles on the seeds blow and produce every year! Mr.CBB

  2. Hi Dennis, asparagus are good with just about anything. But I like the concept of just garlic and asparagus instead of bacon and asparagus or pancetta and asparagus. It’s a healthier version which corresponds with who I want to be. I will bake this no frills recipe this weekend.
