Yellow Mango Salsa


Yellow Mango Salsa

I usually make this with the large green mango’s but I noticed these small yellow mango’s at Sprouts and decided to give them a try.  I was not disappointed; the yellow mango seemed sweeter and worked well with the peppers.  This works well topping fish or chicken, you choose.

Ingredients:

4 Green onions (white ends only), chopped small

½ Banana pepper, seeded and chopped small

1 Jalapeno pepper, seeded and chopped small

1/8 Red pepper, chopped small

Salt and pepper

Juice of one lime

Direction:

Mix all ingredients in a bowl and chill until ready to serve.

  1. We prefer the yellow mangos. We find them to be sweeter and less expensive than the large green ones. Our local Asian market sells a case for $9.00. You’re lucky if you can find the large green ones for $1.50@.

      • Wen I was shopping this past week I found some of these beauties at the local Tom Thumb for $6.00 for 6 so I bought them. The next stop was our gourmet market, The Central Market. I found them again for $0.79@. Arrgggghhhhh!!!!! Oh well, at least I have some. We’ve already done grilled halibut with a mango salsa with rice and roasted asparagus. Tonight we’re going to make a beautiful mango sorbet to go with Baby Lady’s red chile enchilada topped with a fried egg. I will be posting these recipes at some point.
