Island Chicken


1 Tablespoon Olive oil

1 Teaspoon Caraway seeds

1/2 Teaspoon Cumin Seeds

Salt, Kosher

Pepper, black, fresh ground

4 Each Chicken breast, skinless and boneless

1 Whole Grapefruit, pink

1 Whole Cinnamon stick

Island Chicken


Instructions: Toast the seeds in a medium hot dry pan until you can smell the fragrance of the seeds. Grind the seeds and set aside. Season the chicken breast on both sides with salt, pepper, and 3/4 of the

ground seeds. Heat the olive oil in a medium hot pan, place the chicken breasts in the pan and

brown on both sides. Preheat the oven to 350 and place the pan with the chicken in the oven and

cook for 30 minutes. Remove the pan and set the chicken aside to rest. Put the pan on the stove

over medium heat. Deglaze the pan with the juice of the grapefruit. Add the remaining ground

seeds and the cinnamon stick. Reduce by 1/4 then pour over the chicken and serve.
