Chicken thighs marinated in citrus
New Year’s Day has arrived and my kick to eat healthier is with us. I also have a full Washington Navel orange tree and a Myer lemon tree in my back yard, time to use this citrus in my cooking.
Ingredients:
6 chicken thighs, boneless and skinless
1 orange
1 lemon
1 lime
Salt and pepper
1 tsp. paprika
Directions:
Juice the orange, lemon and lime. Place the chicken in a plastic bag and cover with the juice and let marinade for 20 minutes. Place the chicken in a baking dish seasoning with salt, pepper and paprika. Place in a 375 oven for about 45 minutes. Remove from the oven and let rest before slicing in bite size pieces.








I can’t believe you have those fruit trees in your yard, I’d be in heaven. We love to use citrus to cook. My father in law has tangerines that he grows in his greenhouse and we use them for salad dressings. The chicken looks awesome. Mr.CBB
Thanks. The orange tree is only ready for harvest in late December/January. We usually eat most of the crop. The lemon is good almost year round.
Dennis, the weather must be awesome for you to have a lemon tree in your backyard. I’m always cooking with lemon. Imagine how much I’d do it with a lemon tree. Have you done anything with lemon in its early stages? When it’s not quite ripe?
The lemon produces almost year round, so we always have fresh lemons to cook with. What do you do with the almost ripe lemons?
Must be so wonderful to have your own fruit trees! Wonderful color on that chicken.
The trees are great. The challenge is to use all the lemons that the tree produces. The oranges are only around for a couple of months and trust me they get eaten daily.
You could try preserved lemons!
